Homemade French-Style Macarons - "Cook's Illustrated"

***Finally...I'm making progress with the ever-hard-to-make French Macaron. I found this recipe in the recent "Holiday Baking" special issue of Cooks Illustrated. Their recipes have never failed me...they test, re-test, and test again every single recipe...until they are almost fool-proof. I noticed that this recipe for macarons was a little different from the ones I've been using. One big difference was the addition of Cream of Tartar to the egg whites. It acts as a stabilizer and helps to stiffen the egg whites. Also I recently purchased a silicon baking mat....what a great investment! I only have one right now, so I had to make the other batches of macarons on regular parchment paper. The macarons baked on the silicon mat looked much better, seemed to bake more evenly, and even rose higher. It looks like I'll be buying a few more of those mats soon. Hmm...maybe Santa can leave a few of those in my stocking? ;)

So, here's a list of some things I did differently this time around:
1. Added a pinch of Cream of Tartar to the egg whites
2. Aged the egg whites at room temperature for 24 hours (covered)
3. I processed my own almond flour by processing 11 ounces of slivered almonds to a fine flour in a food processor.
4. Used a silicon baking mat on one batch.

Cookies
3 3/4 cups (15 ounces) almond flour (see my note above)
3 1/3 cups (13 1/3 ounces) confectioner's sugar
1/8 tsp. table salt
5 large egg whites, room temperature
Pinch cream of tartar
5 tsp. granulated sugar
1 tbsp. vanilla extract

Directions:
1. Line 2 baking sheets with parchment paper. Fit large pastry bag with 1/2 inch plain tip; set aside. Process half of almond flour, half of confectioner's sugar, and salt together in food processor until mixture is very finely ground, about 20 seconds. Transfer to bowl and repeat with remaining almond flour and confectioner's sugar; stir together and set aside.

2. In stand mixer fitted with whisk attachment, beat egg whites at medium-low speed until opaque and frothy, about 30 seconds. Add cream of tartar, increase speed to medium-high, and continue to beat until white, thick, and voluminous, with consistency of shaving cream, about 90 seconds. Slowly sprinkle in granulated sugar and continue to beat until stiff peaks form and sugar is incorporated, about 60 seconds.

3. Gently fold one-quarter of almond flour mixture into whites, followed by vanilla. Gradually fold in remaining almond mixture until thick batter forms.

4. Fill prepared pastry bag with batter. Twisting top of bag to apply pressure, push batter down toward tip and pipe twenty 2-inch mounds about 1 inch apart. Use back of teaspoon or finger dipped in bowl of cold water to even out shape and smooth surface of piped mounds. Repeat with remaining batter and baking sheet. Let cookies sit at room temperature until tops are dry and smooth skin has formed, 1 to 2 hours.

5. Adjust oven rack to middle position and heat oven to 325 degrees. Bake cookies, 1 sheet at a time, until lightly browned, about 20 minutes, rotating baking sheet halfway through baking. Carefully slide parchment paper with cookies onto wire rack and cool completely. Bake second batch of cookies while first batch cools.
***Note: If your macarons stick to the parchment paper and won't easily come off, put about 2 tbsp. of water between the parchment paper and baking sheet. Let sit for about 15-30 seconds and try again. Don't wait too long...the water will make the macarons soggy!***
Chocolate Ganache Filling
6 oz. bittersweet or semisweet chocolate, finely chopped
2 tbsp. unsalted butter
1/2 cup heavy cream

Directions:
Combine the chocolate and butter in a heatproof bowl. In a small saucepan over medium-high heat, bring the cream just to a boil. Remove from the heat and immediately pour over the chocolate and butter. Stir with a wire whisk until the chocolate and butter melt and are smooth. Let cool until spreadable. (I chilled the ganache in the fridge until it was the consistency that I wanted.)

To Assemble:
Spread about 1 tbsp. chocolate ganache over flat sides of half of cooled cookies and gently cover with flat sides of remaining cookies to form sandwich cookies.

Grilled Pork Loin w/Apple-Cranberry Filling

UPDATE (9/29/08): I made this pork loin again a few days ago for a dinner party. However, this time I baked it in the oven instead of cooking it on the grill. I much preferred it in the oven, and it got rave reviews! The outside was more tender, and it was more moist overall. Just bake it at 325 degrees for about 1 1/2 hours...or until instant read thermometer reads 145 - 150 degrees.

***Okay ladies and gentlemen, I've officially found my favorite way to prepare a pork loin. This dish was a.m.a.z.i.n.g....and it didn't just taste good, but it made my entire house smell of sweet apples, cranberries, cinnamon, fresh ginger and apple cider...oh my goodness. It was like Yankee Candle good...lol.

This would no doubt be the perfect holiday dish...or just the perfect way to welcome the fall season. I'm so happy that there are left-overs sitting in my fridge right now. The fact that its grilled makes this one even better.

This recipe made its way to me via iTunes of all places. I subscribe to the Cooks Illustrated Podcast, and this is the most recent video. HERE is a link to some very helpful notes for this recipe.

Did I mention that I loved this dish? LOL.***

From Cooks Illustrated:
"This recipe is best prepared with a loin that is 7 to 8 inches long and 4 to 5 inches wide. To make cutting the pork easier, freeze it for 30 minutes. If mustard seeds are unavailable, stir an equal amount of whole-grain mustard into the filling after the apples have been processed. The pork loin can be stuffed and tied a day ahead of time, but don't season the exterior until you are ready to grill."

INGREDIENTS:
Filling
1 cup apple cider
1/2 cup cider vinegar
3/4 cup packed light brown sugar (5 1/4 ounces)
1 large shallot , halved lengthwise and sliced thin crosswise (about 1/4 cup)
1 1/2 cups dried apples (packed), 4 ounces
1/2 cup dried cranberries (packed), 2 1/2 ounces
1 tablespoon grated fresh ginger
1 tablespoon yellow mustard seeds (see note above)
1/2 teaspoon ground allspice
1/8 to 1/4 teaspoon cayenne pepper
Pork Loin
2 cups wood chips
2 1/2 pound boneless center-cut pork loin roast (see note above)
Kosher salt and ground black pepper
Vegetable oil for cooking grate

DIRECTIONS:
1. FOR THE FILLING: Bring all ingredients to simmer in medium saucepan over medium-high heat. Cover, reduce heat to low, and cook until apples are very soft, about 20 minutes. Push mixture through fine-mesh strainer to extract as much liquid as possible. Return liquid to saucepan and simmer over medium-high heat until reduced to 1/3 cup, about 5 minutes; reserve glaze. Meanwhile, pulse apple mixture in food processor until uniformly coarsely chopped, about fifteen 1-second pulses. Transfer filling to bowl and refrigerate while preparing pork.

2. FOR THE PORK: Soak wood chips in water for 30 minutes. Meanwhile, cut meat to even 1/2-inch thickness. Season inside liberally with salt and spread apple filling in even layer, leaving 1/2-inch border. Roll tightly and tie with twine at 1-inch intervals. Season exterior liberally with salt and pepper.

3.Drain chips and place in small disposable aluminum pan. About 20 minutes before grilling, place pan with chips on primary burner (burner that will remain on during cooking); position cooking grate over burners. Turn all burners to high and heat with lid down for 15 minutes. Scrape and oil grate. Leave primary burner on high and turn off other burner(s). Place roast, fat-side up, on side opposite primary burner.
4. Grill-roast until instant-read thermometer inserted into thickest part of roast registers 130 to 135 degrees, 55 to 70 minutes, flipping once halfway through cooking time. Brush roast with half of reserved glaze; flip and brush with remaining glaze. (You may need to reheat glaze briefly to make spreadable.) Continue to cook until glaze is glossy and sticky, about 5 minutes longer.
5. Transfer roast to cutting board, loosely tent with foil, and let rest for 15 minutes. (Internal temperature should rise to about 145 degrees.) Cut into 1/2-inch-thick slices, removing twine as you cut. Serve immediately.

Summer Vegetable Gratin

***I was so excited when I opened the July/August 2008 issue of Cooks Illustrated magazine. I saw this recipe and knew that I had to try it...especially with all of the fresh summer produce that's available.

I got to visit the Trussville Farmers Market recently, where I bought some beautiful veggies...yellow squash, red tomatoes, green tomatoes, and heirloom tomatoes. So, this was the perfect time to make this gratin. If you're ever in the area, you should definitely stop by Andy Kemp's booth. He's with A & P Farms out of Gallant, AL and Starkville, MS. He had a wonderful assortment of fresh produce...at great prices! He even let me sample an heirloom tomato...I had never had one!
The Trussville Farmers Market is open from 2 - 6 on Tuesdays (across the street from the Trussville Antique Mall).

The mixture of squash, zucchini, and tomatoes in this dish is delicious...and very healthy. You'll REALLY enjoy this one! I'll certainly be making it again.***

Ingredients:
6 Tbsp. olive oil
1 lb zucchini, ends trimmed and cut crosswise into 1/4 thick slices
1 lb summer squash, ends trimmed and cut crosswise into 1/4 thick slices
***2 lbs of only zucchini or only summer squash can be substituted***
2 tsp salt
3 large ripe tomatoes sliced 1/4 inch thick
2 yellow onions, cut in half and then thinly sliced from pole to pole
black pepper to taste
2 garlic cloves, minced or pressed through a garlic press
1 Tbsp fresh thyme leaves minced
3/4 cup bread crumbs
1 cup grated Parmesan cheese
1/4 minced shallots (about 2 medium)
1/4 cup chopped fresh basil leaves

Directions:
Preheat oven to 400. Place the oven rack in the upper middle position. Brush a 9x13 pan with 1Tbsp of olive oil and set aside.

Combine sliced zucchini and squash with 1tsp salt in a large bowl and then transfer the salted veggies to a colander set over the bowl. Let stand for about 45 minutes, the veggies will release about 3 Tbsps of liquid.

Arrange tomato slices in a single layer over double layer paper towels and sprinkle evenly with 1/2 tsp salt and let stand for about 30 minutes. After that time, place a second double layer of paper towels over the tomatoes and press firmly to dry them.

Meanwhile, heat 1 Tbsp olive oil in a large non-stick skillet over medium heat until shimmering. Add onions, 1/2 tsp salt and black pepper to taste. Cook, stirring occasionally, until onions are soft and dark golden brown, about 20 minutes. Set onions aside.

Combine garlic, 3 Tbsp olive oil, black pepper to taste and thyme in a small bowl. In a large bowl, mix the zucchini and squash in half of the garlic oil mixture.

Pour zucchini and squash in the greased 9x13 pan. Arrange the caramelized onions in a single layer over the squash. Place the tomato slices slightly overlapping in a single layer over the onions. Spoon the remaining garlic oil mixture evenly over the tomatoes.

Bake 40 to 45 minutes, tomatoes will have started to brown around the edges and the vegetables are tender.

Mix breadcrumbs, 1 Tbsp oil, Parmesan and shallots in a bowl. Remove baking dish from the oven and increase heat to 450 degrees. Sprinkle breadcrumb mixture on top of tomatoes. Bake about 5 to 10 minutes more, the gratin will be bubbling and the cheese will be lightly browned.

Sprinkle with basil and let rest for about 10 minutes are room temperature before serving.

Red Pepper Variation: Replace 3 roasted red peppers, skinned and cut into 1 inch pieces for 1 lb of the squash (do not SALT the roasted peppers). The Parmesan cheese can be substituted with one cup shredded mozzarella.

Tilapia With Zucchini and Tomatoes en Papillote

***I love cooking with tilapia...it's light, fresh, and doesn't have that strong "fishy" taste. I've made it a number of ways...broiled, fried, baked...pecan-crusted, lemon-flavored, etc. But, I have to say that this recipe from Cooks Illustrated is one of my favorite tilapia recipes I've prepared. The fish came out incredibly tender and moist, with a great flavor. This is certainly because of the way it's cooked...in a packet of aluminum foil. This is one of those dishes that won't leave you feeling too stuffed. It's light but very satisfying. I might be making it again tonight for dinner...it's that good!***

"En Papillote" (a.k.a. - foil packet)

Ingredients:
2 tbsp. extra-virgin olive oil
2 medium garlic cloves, minced or pressed through a garlic press (about 2 teaspoons)
1 teaspoon minced fresh oregano leaves
1/8 teaspoon red pepper flakes
Salt and ground black pepper
3 medium plum tomatoes (about 12 ounces), cored, seeded, and chopped into 1/2-inch pieces
2 medium zucchini (about 6 ounces each), sliced
1/4-inch-thick
4 haddock fillets, 1-inch-thick (about 6 ounces each)
1/4 cup minced fresh basil leaves

Directions:
Adjust an oven rack to the middle position and heat the oven to 450 F. Combine the oil, garlic, oregano, pepper flakes, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a medium bowl. Measure half of the oil mixture into a separate medium bowl and toss gently with the tomatoes. Add the zucchini to the remaining olive-oil mixture and toss to coat.

Cut four 12-inch squares of heavy-duty foil and lay them flat on a work surface. Shingle the zucchini in the center of each piece of foil. Season the fillets with salt and pepper and place on top of the zucchini. Top the fish with the tomatoes, then tightly crimp the foil into packets.

Set the packets on a rimmed baking sheet and bake until the fish just flakes apart, about 20 minutes. Carefully open the packets, allowing the steam to escape away from you, and let cool briefly. Smooth out the edges of the foil and, using a spatula, gently push the fish, vegetables and any accumulated juices out onto warmed dinner plates. Sprinkle with the basil before serving.

Italian-Style Chicken with Sausage, Peppers, & Onions

***Here's yet another delicious recipe from Cook's Illustrated. It's definitely a little spicy, and I even left out the hot cherry peppers. I served it with mashed potatoes and French bread. M'mm, M'mm Good!***

Ingredients:
1 tablespoon vegetable oil
8 ounces sweet Italian sausage , casings removed
2 pounds bone-in, skin-on chicken breast halves , trimmed of excess fat and skin and cut crosswise into 2 or 3 pieces
Table salt and ground black pepper
1 medium onion , halved and sliced 1/4 inch thick (about 1 1/4 cups)
1 large red bell pepper , stemmed, seeded, and cut into 1/4-inch strips (about 1 1/2 cups)
3–5 pickled hot cherry peppers , stemmed, seeded, and cut into 1/4-inch strips (about 1/4 cup)... (I left these out)
3 medium cloves garlic , minced or pressed through a garlic press (about 1 tablespoon)
2 teaspoons granulated sugar
1/3 cup white wine vinegar plus 2 additional tablespoons
3/4 cup low-sodium chicken broth plus 1 tablespoon
1 teaspoon cornstarch
1 teaspoon minced fresh thyme leaves
1 tablespoon minced fresh parsley leaves

Directions:
1. Adjust oven rack to middle position and heat oven to 350 degrees. Heat 1 teaspoon oil in 12-inch skillet over medium-high heat until shimmering. Add sausage and cook, stirring to break sausage into 1/2-inch pieces, until browned, about 3 minutes. Transfer sausage to plate lined with paper towels. Remove skillet from heat; pour off fat into small bowl and reserve; wipe out skillet with paper towels.

2. Return skillet to medium-high heat and heat remaining 2 teaspoons oil until smoking. Pat chicken dry and liberally season with salt and pepper. Add chicken, skin side down, and cook without moving until well browned, 3 to 5 minutes. Using tongs, turn chicken and brown on other side, about 3 minutes. Transfer chicken to large plate. Remove skillet from heat and pour off fat into bowl with sausage fat; wipe out skillet with paper towels.

3. Return skillet to medium-high heat and heat 1 tablespoon reserved fat until shimmering. Add onion and cook until beginning to soften, about 2 minutes. Add bell pepper and cherry peppers and cook, stirring occasionally, until bell pepper begins to soften, about 4 minutes. Add garlic and cook, stirring frequently, until fragrant, about 30 seconds. Add sugar, 1/3 cup vinegar, and 3/4 cup broth; bring mixture to boil, scraping up browned bits from pan bottom.

4. Add sausage and chicken (with any accumulated juices) to skillet, arranging chicken pieces in single layer, skin side up, on top of peppers and onion. Transfer skillet to oven and cook until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 18 to 22 minutes, removing smaller pieces sooner if necessary. Meanwhile, combine cornstarch, thyme, and remaining tablespoon broth in small bowl.

5. Carefully remove skillet from oven (handle will be very hot) and transfer chicken, skin side up, to platter or individual serving plates. Place skillet over medium-high heat and stir in cornstarch mixture. Simmer sauce mixture until slightly thickened, 2 to 3 minutes. Off heat, taste sauce and add up to 2 tablespoons vinegar. Adjust seasonings with salt and pepper. Spoon sauce around chicken, being careful not to pour it directly over chicken. Sprinkle with parsley and serve immediately.

Italian Pot Roast

***Pot roast is one of those comforting, yummy meals that you look forward to on a lazy Sunday afternoon. Growing up, my Mom always made a traditional pot roast. You know...roast, potatoes, carrots, onions...slowly cooked in a Crock Pot all afternoon long. So good! I've never even thought to cook a pot roast any other way until opening the recent "The Best of America's Test Kitchens - Best Recipes and Reviews 2008." There it was...Italian Pot Roast a.k.a. stracotto. I never would have thought to put this twist on a roast, but let me just tell you...it was probably the best pot roast I've ever had. It's absolutely PACKED with flavor, and the meat is so tender that it just melts in your mouth. It was such a nice change from what I'm used to. Don't get me wrong, I still love our traditional roast, but this one has earned a spot on my favorites list. I will no doubt be making this recipe for years to come!***

Italian Pot Roast
Serves 4 to 6
Ingredients:
1 boneless chuck-eye roast (3.5 - 4 pounds)
2 tablespoons vegetable oil
1 onion, chopped
1 celery rib, chopped
1 pound cremini or white mushrooms, quartered
2 tablespoons tomato paste
1 (14.5- ounce) can diced tomatoes
1/2 cup tomato sauce
2 teaspoons sugar
1/2 cup water
1 cup red wine
1 large garlic heat, outer papery skins removed, then halved
1 large sprig fresh thyme
1 sprig fresh rosemary

Directions:
Adjust an oven rack to the middle position and heat oven to 300 degrees. Pat the roast dry with paper towels and season with salt & pepper.

Heat the oil in a Dutch oven over medium-high heat until just smoking. Brown the roast on all sides, 8 to 12 minutes. Transfer the roast to a large plate. Reduce the heat to medium and cook the onions, celery, mushrooms, and tomato paste until the vegetables begin to soften, about 8 minutes. Add the diced tomatoes, tomato sauce, sugar, water, 1/2 of the wine, garlic and thyme. Return the roast and the accumulated juices to the pot and bring to a simmer over medium-high heat. Place a piece of foil over the pot, cover with the lid and transfer the pot to the oven.

Cook until the roast is just fork-tender, 2.5 to 3.5 hours, flipping the roast after 1 hour. Uncover the pot and let the roast rest in its juices for 30 minutes, skimming the surface fat after 20 minutes. Transfer the roast to a carving board and tent with foil. Remove and reserve the garlic head and skim the remaining fat from the pot. Add the remaining 1/2 cup wine to the pot, bring to a boil over medium-high heat, and cook until the sauced begins to thicken, about 12 minutes.
Meanwhile, carefully squeeze the garlic from the halves and mash into a paste. Add the rosemary to the pot and simmer until fragrant, about 2 minutes.

Remove the rosemary and thyme springs, stir in the mashed garlic, and season the sauce with salt and pepper to taste. Cut the meat against the grain into 1/2 inch thick slices, or pull it apart into large pieces.

Sauteed Spinach with Pecans & Feta

***If you like spinach, you will love this! It has tons of flavor and would even be a great addition to holiday dinners. I could definitely see this on my table around Thanksgiving or Christmas. It just has that something extra that makes it a special dish.***

Ingredients:
3 (6oz) bags baby spinach (about 16 cups)
1/4 cup water
2 Tbsp extra virgin olive oil (EVOO), plus 2 tsp. for drizzling
3 large shallots, slice thin crosswise(about1 cup)
Table salt
2 tsp. red wine vinegar
1/3 cup chopped pecans (toasted)
1 1/2 oz. feta cheese, crumbled (about 1/4c)

Directions:
1. Place spinach and water in a large microwave-safe bowl. Cover bowl with large microwave-safe dinner plate (plate should completely cover bowl and not rest on spinach). Microwave on high power until spinach is wilted and decreased in volume by half, 3-4 minutes. Using potholders, remove bowl from the microwave and keep covered for 1 minute. Carefully remove plate and transfer spinach to a colander set in the sink. Using back of rubber spatula, gently press spinach against colander to release excess liquid. Transfer spinach to cutting board and rough chop. Return to colander and press a second time.

2. Heat 2 Tbsp. oil and shallots in 10" skillet over medium-high heat. Cook, stirring constantly, until shallots are golden brown, 3-5 mins. Add spinach to skillet, using tongs to stir and coat with oil. Sprinkle with 1/4 tsp salt and continue stirring with tongs until spinach is uniformly wilted and glossy green, about 2 minutes. Sprinkle with vinegar and pecans; stir to combine. Drizzle with remaining 2 tsp. oil and sprinkle with feta. Season with salt to taste and serve immediately.

Herb-Crusted Pork Roast

***Here's yet another yummy recipe from Cooks Illustrated magazine. I used dried thyme and rosemary in place of fresh, and the roast came out delicious anyway.***

"Perfecting Herb-Crusted Pork Roast"
Cooks Illustrated magazine

Ingredients:
3 pound boneless center-cut pork loin roast
Kosher Salt
1/4 cup sugar
1/2 cup fresh bread crumbs
1/2 cup grated Parmesan cheese
1 medium shallot, minced
4 tablespoons olive oil
2 teaspoons olive oil
Ground black pepper
1/3 cup packed fresh parsley or basil leaves, minced (I used fresh basil)
2 tablespoons minced fresh thyme leaves
1 teaspoon minced fresh rosemary
1 large clove garlic, minced

Directions:
1. Lightly score fat cap on pork, making 1/4-inch crosshatch pattern. Cut pocket in roast. Dissolve 1/2 cup salt and sugar in 2 quarts water in large container; submerge roast, cover with plastic wrap, and refrigerate for 1 hour. Rinse roast under cold water and dry thoroughly with paper towels.

2. Meanwhile, adjust oven rack to lower-middle position and heat oven to 325 degrees. Place bread crumbs in a medium bowl and add 2 tablespoons Parmesan, shallot, 1 tablespoon oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Using fork, toss mixture until crumbs are evenly coated with oil.

3. Add parsley, thyme, rosemary, garlic, remaining 6 tablespoons Parmesan, 3 tablespoons oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper to food processor workbowl and process until smooth, about twelve 1-second pulses. Transfer herb paste to small bowl.

4. Spread 1/4 cup herb paste inside roast and tie. Season roast with pepper.

5. Heat remaining 2 teaspoons oil in 12-inch skillet over medium-high heat until just smoking. Add roast, fat side down, and brown on all sides, 8 to 10 minutes, lowering heat if fat begins to smoke. Transfer roast to wire rack set in rimmed baking sheet lined with aluminum foil.

6. Using scissors, snip and remove twine from roast; discard twine. Spread remaining herb paste over roast and top with bread crumb mixture. Transfer baking sheet with roast to oven and cook until thickest part of roast registers 145 degrees on instant-read thermometer, 50 to 75 minutes. Remove roast from oven and let rest 10 minutes. Internal temperature should rise to 150 degrees.

7. Using spatula and meat fork, transfer roast to carving board, taking care not to squeeze juices out of pocket in roast. Cut roast into 1/2-inch slices and serve immediately.

Chicken Saltimbocca Done Right

Cooks Illustrated: "Chicken Saltimbocca Done Right"

From the mag:
"Buy cutlets that are approximately 5 to 6 inches long. If the tip is too thin, trim back 1 to 2 inches to make the cutlet of uniform thickness. If cutlets are unavailable, you can make your own with four (8-ounce) boneless, skinless breasts. Although whole sage leaves make a beautiful presentation, they are optional and can be left out of step 3. Make sure to buy prosciutto that is thinly sliced, not shaved; also avoid slices that are too thick, as they won’t stick to the chicken."

Ingredients:
½ cup unbleached all-purpose flour
Ground black pepper
8 thin boneless, skinless chicken breast cutlets (about 2 pounds), trimmed of ragged edges as necessary
1 TBSP minced fresh sage leaves
8 large whole leaves (optional)
8 thin slices of prosciutto, cut into 5- to 6-inch-long pieces to match cutlets (about 3 ounces)
4 TBSP olive oil
1 ¾ cups dry vermouth or white wine
2 tsp lemon juice
4 TBSP unsalted butter, cut into 4 pieces and chilled
1 TBSP minced fresh parsley leaves
Table salt

Directions:
Adjust oven rack to middle position and heat oven to 200 degrees. Place flour in shallow dish.
Pat cutlets dry with paper towels. Pepper the chicken breasts, then dredge in flour, shaking off any excess. Lay cutlets flat and sprinkle evenly with minced sage. Place 1 prosciutto slice on top of each cutlet, pressing lightly to adhere; set aside.

Heat 2 TBSP oil in 12-inch skillet over medium-high heat until beginning to shimmer. Add sage leaves (if using) and cook until leaves begin to change color and are fragrant, about 15 to 20 seconds. Using slotted spoon, remove sage to paper towel-lined plate; reserve. Add half of cutlets to pan, prosciutto side down, and cook until light brown, 2 to 3 minutes. Flip and cook on other side until light golden brown, about 2 minutes more. Transfer to wire rack set on rimmed baking sheet and keep warm in oven. Repeat with remaining 2 TBSP oil and cutlets, then transfer to oven to keep warm while preparing sauce.

Pour off excess fat from skillet. Stir in vermouth, scraping up any browned bits, and simmer until reduced to about ⅓ cup, about 5 to 7 minutes. Stir in lemon juice. Turn heat to low and whisk in butter, 1 TBSP at a time. Off heat, stir in parsley and season with salt and pepper. Remove chicken from oven and place on platter. Spoon sauce over cutlets before serving.

Cheesy Chicken & Broccoli Bake

***It's amazing how relaxing cooking can be. After a long day at work, I really look forward to getting into the kitchen and creating something new, and this recipe fit the bill tonight....it definitely qualifies as comfort food, in my opinion. It's simply cheesy goodness, if you ask me....LOL. I served it with the Parmesan Mashed Potatoes listed below and some butter & parsley drop biscuits.***

Cheesy Chicken & Broccoli Bake
Cook's Country magazine

Ingredients:
4 boneless, skinless chicken breasts (about 1 1/2 lbs.) (I only used 2 since it's just Brad and me)
Salt & pepper
4 tbsp. unsalted butter
1 onion, finely chopped
1/4 cup all-purpose flour
1 cup low-sodium chicken broth
1/2 cup heavy cream
1/2 cup dry sherry
1 1/2 lbs. broccoli, florets chopped, stems peeled and sliced thin (I used a 16 oz. bag of frozen broccoli)
1 1/2 cups grated Parmesan cheese (I used finely shredded cheddar/mozzerella cheese)

Directions:
1. Adjust oven rack to upper-middle position and heat broiler. Pat chicken dry with paper towels and season with salt and pepper. Melt 1 tbsp. butter in large nonstick skillet over medium-high heat. Cook chicken until golden, about 3 minutes per side. Transfer to plate.

2. Add remaining butter and onion to empty skillet and cook until onion is beginning to brown, about 2 minutes. Stir in flour and cook until golden, about 1 minute. Whisk in broth, cream, and sherry and simmer until thickened, about 3 minutes. Return chicken to skillet, reduce heat to low, and simmer, covered, until chicken is cooked through, about 15 minutes. Transfer chicken to broiler-safe baking dish.

3. Meanwhile, microwave broccoli on high power, covered, in large bowl until bright green and slightly softened, 2 to 4 minutes (a little longer if using frozen broccoli). Add broccoli and 1 cup cheese to skillet, stirring to combine. Season with salt and pepper and pour broccoli mixture over chicken. Sprinkle remaining cheese over top and broil until browned and bubbly, 2 to 4 minutes. Serve.

French Chicken in a Pot

***I came across this recipe in a recent issue of Cooks Illustrated. It sounded wonderful, and it was an excuse to use my new Dutch oven! ;) Let me just say that this chicken was tender enough to cut with a butter knife! It was also very moist. However, if you're looking for a beautifully crisp and brown bird when you pull it out of the oven, this one isn't for you. It makes a much prettier presentation carved and on a platter. Don't judge a book by its cover though! It was delicious!***

French Chicken in a Pot
Cooks Illustrated magazine

Ingredients:
1 roasting chicken (4 1/2 - 5lbs), giblets removed and discarded, wings tucked under back
2 tsp kosher salt
1/4 tsp ground black pepper
1 Tbsp olive oil
1 small onion, chopped medium (about 1/2 c.)
1 small stalk celery, chopped medium (about 1/4 c.)
6 medium garlic cloves, peeled and trimmed
1 bay leaf
1 medium sprig fresh rosemary (I used dried rosemary)
1/2–1 tsp juice from 1 lemon

Directions:
Adjust oven rack to lowest position and heat oven to 250 degrees. Pat chicken dry with paper towels and season with salt and pepper.

Heat oil in large Dutch oven over medium heat until just smoking. Add chicken breast-side down; scatter onion, celery, garlic, bay leaf, and rosemary (if using) around chicken. Cook until breast is lightly browned, about 5 mins.

Using a wooden spoon inserted into cavity of bird, flip chicken breast-side up and cook until chicken and vegetables are well browned, 6 to 8 mins. Remove Dutch oven from heat; place large sheet of foil over pot and cover tightly with lid. Transfer pot to oven and cook until instant-read thermometer registers 160 degrees when inserted in thickest part of breast and 175 degrees in thickest part of thigh, 80 to 110 mins.

Transfer chicken to carving board, tent with foil, and rest 20 mins.

Meanwhile, strain chicken juices from pot through fine-mesh strainer into fat separator, pressing on solids to extract liquid; discard solids (you should have about 3/4 c. juices). Allow liquid to settle 5 mins, then pour into saucepan and set over low heat. Carve chicken, adding any accumulated juices to saucepan. Stir lemon juice into jus to taste.

Serve chicken, passing jus at table. (I sprinkled the chicken with thyme before serving.)

Garlicky Bean Enchiladas

Garlicky Bean Enchiladas

Everyday with Rachael Ray mag

***Hola! This is probably the first vegetarian dish that I've ever really made, and these weren't Brad's favorite for that very reason. He said that they would have been much better if they had chicken or beef in them...oh well. There's always next time! On the other hand, I thought they were really good. I added salsa and sour cream to jazz them up a bit. Even though they don't have any meat in them, they really do fill you up!***

Ingredients:
1/2 cup plus 2 tablespoons vegetable oil
8 cloves garlic, thinly sliced
Two 15.5-ounce cans cannellini beans, drained
1/3 cup chicken broth
Salt
Twelve 6-inch corn tortillas
2 cups store-bought salsa verde
1 1/2 cups shredded pepper jack cheese

Directions:
1. Preheat the oven to 375°. In a medium saucepan, heat 2 tablespoons oil over medium heat. Add the garlic and cook, stirring, until just golden, about 2 minutes. Stir in the beans and cook for 1 minute, then stir in the chicken broth. Season with salt and cook, mashing the beans, until softened, 7 minutes. Let cool slightly.

2. Meanwhile, line a baking sheet with paper towels. In a small skillet, heat the remaining 1/2 cup oil. Fry each corn tortilla for 3 seconds on each side, then transfer to the prepared baking sheet to drain.

3. Place about 1/4 cup mashed beans on 1 tortilla and roll up to enclose; transfer to an oiled 9-by-13-inch baking dish. Repeat with the remaining beans and tortillas.

4. Pour the salsa over the filled tortillas. Sprinkle the cheese on top. Bake until the cheese is melted and the salsa is bubbling, about 20 minutes.

Ultra Crunchy Baked Pork Chops

***These pork chops are wonderful! They are from the Feb. 2008 issue of Cooks Illustrated. The ultra-crunchy outer layer is very flavorful. It's also a plus that they are baked...not fried. These are definitely worthy of my favorites list...I'll be making them again!***

Ingredients:
4 boneless center-cut pork chops, 6 to 8 ounces each, 3/4 to 1 inch thick, trimmed of excess fat
4 slices hearty white sandwich bread, torn into 1 inch pieces
1 small shallot, minced (about 2 tbsp)
3 medium garlic cloves, minced (about 1 tbsp)
2 tbsp. vegetable oil
Ground black pepper
2 tbsp. grated parmesan cheese
1/2 tsp. minced fresh thyme leaves
2 tbsp. minced fresh parsley leaves
1/4 cup plus 6 tbsp. unbleached all-purpose flour
3 large egg whites
3 tbsp. Dijon mustard
Lemon wedges

Directions:
Adjust oven rack to middle position and heat oven to 350 degrees.

Pulse bread in food processor until coarsely ground, about eight 1-second pulses (you should have 3 1/2 cups crumbs). Transfer crumbs to rimmed baking sheet and add shallot, garlic, oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Toss until crumbs are evenly coated with oil. Bake until deep golden brown and dry, about 15 minutes, stirring twice during baking time. (Do not turn off oven.) Cool to room temperature. Toss crumbs with Parmesan, thyme, and parsley.

Place 1/4 cup flour in pie plate. In second pie plate, whisk egg whites and mustard until combined; add remaining 6 tbsp. flour and whisk until almost smooth, with pea-sized lumps remaining.

Increase oven temperature to 425 degrees. Spray wire rack with nonstick cooking spray and place in rimmed baking sheet. Season chops with pepper. Dredge 1 pork chop in flour, shake off excess. Using tongs, coat with egg mixture; let excess drip off. Coat all sides of chop with bread crumb mixture, pressing gently so that thick layer of crumbs adheres to chop. Transfer breaded chop to wire rack. Repeat with remaining 3 chops.

Bake until instant-read thermometer inserted in center of chops registered 150 degrees, 17 to 25 minutes. Let rest on rack 5 minutes before serving with lemon wedges.

Garlic Shrimp

***You can serve this shrimp with crusty bread for dipping in the richly flavored, leftover olive oil.***

Ingredients:

7 medium garlic cloves, minced
1 lb. large (31-40) shrimp; peeled, deveined
8 tbsp. E.V.O.O.
1/2 tsp. table salt
1 tsp. paprika
1 tbsp. chopped fresh parsley leaves

Directions:

1. Mince 3 garlic cloves with chef's knife or garlic press. Toss minced garlic with shrimp, 2 tbsp. olive oil, and salt in a medium bowl. Let shrimp marinate at room temperature for 30 minutes.

2. Thinly slice remaining 4 cloves of garlic. Heat the other 6 tbsp. olive oil in a medium skillet over low heat and add garlic. Cook, stirring occasionally until garlic is tender but not browned, 2-3 minutes. If garlic has not begun to sizzle after a few minutes, increase heat to medium-high; add shrimp with marinade to pan in a single layer. Sprinkle shrimp with paprika and parsley. Cook shrimp, undisturbed, until oil starts to gently bubble, about 2-3 minutes. Using tongs, flip shrimp and continue to cook until shrimp are cooked through.

Serve immediately.
