Sausage-Stuffed Mushrooms


***Marsala wine and mushrooms are quite the perfect pair!  Ina Garten takes advantage of that perfect marriage of flavors in her recipe for Sausage-Stuffed Mushrooms.  On my way home from work tonight, I stopped by The Fresh Market (Which, by the way has to be my favorite grocery store!!).  There, I picked up the extra-large mushrooms, sweet Italian sausage and Italian mascarpone cheese that I needed.  


Once at home, I got to work on these yummy little mushrooms!  After they are stuffed, they need about 40 - 50 minutes in the oven, so be sure to give yourself enough time.  Ina calls for 50 minutes, but I found that mine were ready after 40 minutes....Just keep an eye on them!


The flavor of the stuffing is incredible.  The mascarpone and parmesan cheeses add a luxurious texture.  The only change that I made was with the scallions.  I simply substituted the scallions with some minced green bell pepper.  It worked beautifully!

I could definitely see these served as part of a Thanksgiving dinner...They taste special enough for a party, but are easy enough to serve as part of a stress-free family dinner.  The extra large mushrooms are filling and meaty themselves, so when the stuffing is added they almost become a meal in themselves!

Sausage-Stuffed Mushrooms

Ingredients

  • 16 extra-large white mushrooms
  • 5 tablespoons good olive oil, divided
  • 2 1/2 tablespoons Marsala wine or medium sherry
  • 3/4 pound sweet Italian sausage, removed from the casings
  • 6 scallions, white and green parts, mince (I substituted with minced green bell pepper)
  • 2 garlic cloves minced
  • 2/3 cup panko crumbs
  • 5 ounces mascarpone cheese, preferably from Italy
  • 1/3 cup freshly grated Parmesan
  • 2 1/2 tablespoons minced fresh parsley leaves
  • Salt and freshly ground black pepper

Directions

Preheat the oven to 325 degrees F. 

Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.

Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly. 

Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.

Everyday Granola - Bon Appetit Magazine


***Here's a simple, quick and delicious recipe for "Everyday Granola."  I found this while flipping through a recent issue of Bon Appetit magazine...one of my favorites!  The ingredients sounded perfect for what I had in mind.  It was sweet and salty at the same time, and makes an awesome snack.  You can serve it with yogurt or milk, but I preferred mine plain.

While it's baking, be sure to stir it around on the baking sheet every 10 minutes, as the recipe calls for.  This will keep the pieces around the edges from burning and ensure evenly cooked granola.

The combination of the salty and sweet in this granola is a crowd AND palate pleaser!

Everyday Granola

Ingredients:
  • 3 cups old-fashioned oats
  • 1 cup coarsely chopped pecans
  • 1/2 cup unsweetened shredded coconut
  • 3 tablespoons (packed) brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon (generous) salt
  • 1/3 cup honey
  • 2 tablespoons vegetable oil
  • 1 cup assorted dried fruit

Preparation

  • Preheat oven to 300°F. Line rimmed baking sheet with parchment. Mix first 7 ingredients in large bowl. Stir honey and oil in saucepan over medium-low heat until smooth. Pour honey mixture over oat mixture; toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Place sheet on rack. Stir granola; cool. Mix in fruit. DO AHEAD Can be made 1 week ahead. Store airtight.

Frank Stitt's Baked Feta with Focaccia

***It's hard to beat a super simple but delicious appetizer...Frank Stitt has created just that with his "Baked Feta with Focaccia."

Step One: Pour marinara sauce into a gratin dish.
Step Two: Sprinkle feta cheese over the sauce.
Step Three: Bake until bubbly!

Meanwhile, the focaccia is brushed with olive oil and toasted until golden brown. That's it!

Now, Chef Stitt does include his own recipes for both the marinara sauce and focaccia. However, it was one of those nights where I wanted to simplify! I used a good quality store-bought marinara sauce and substituted a fresh baguette for the focaccia.

This turned out marvelously and will definitely be a regular occurence in our household.

Baked Feta with Focaccia

Ingredients:
2 cups marinara sauce
1 cup crumbled feta
Four 4-by-2-inch rectangles focaccia
1 tbsp. olive oil
Pinch of cayenne (optional)
A few basil leaves

Directions:
Preheat the oven to 450 degrees F.

Spoon the marinara into a medium gratin dish (approximately 8 inches long) or divide it among four individual gratin dishes or ramekins. Scatter the cheese over the center.

Bake until the sauce is bubbling hot, 8 to 10 minutes.

Meanwhile, cut the focaccia into strips or triangles (large bite-sized pieces) and brush with the olive oil. Arrange on a baking sheet and toast in the oven until golden brown, 5 to 6 minutes.

Sprinkle the sauce with a little cayenne, if desired, and put the gratin dish on a large platter and surround with the focaccia, or put the individual dishes on serving plates and serve the focaccia on the side. Tear the basil leaves over the top. Dig in, or lose out.

Olive Cheese Bread & ROLL TIDE!


***First of all, I just have to send a big "ROLL TIDE!!!" to all of my fellow University of Alabama Crimson Tide Fans! We won the National Championship last night, and it was awesome! I was so proud of our guys...they played hard in what turned out to be a fantastic game...they definitely deserved this historic win!! :-)

Now, back to your regularly scheduled programming:
I was so excited to receive Ree Drummond's new cookbook, The Pioneer Woman Cooks, on Christmas day. If you're looking for a hearty, delicious, mouth-watering dish, I'm sure that Ree has just the recipe for you.

After reading through the cookbook, this Olive Cheese Bread both sounded and looked divine. We love, love, love olives around this house, so I couldn't wait to give this a try. It tasted scrumptious...cheesy, olive-y, goodness!

I couldn't find straight monterey jack cheese at the store, so I had to use a cheddar/monterey jack mix. A great tip that Ree suggests in her cookbook is freezing part of the recipe, if you aren't going to eat it immediately. This worked perfectly for Brad and me. I baked up one half of the french bread, and froze the other half. I simply placed the Olive/Cheese mixture on the second half and froze it whole. Ree promises that it will bake up perfectly after thawing, and it will last several months in the freezer. So, next time I need a quick side dish or appetizer, all I have to do is pull this out of the freezer...Gotta love that!

Ingredients:
1 loaf French Bread
6 ounces, weight Pimiento-stuffed Green Olives
6 ounces, weight Black Olives
2 stalks Green Onions (scallions)
1 stick Butter, Room Temperature
½ cups Mayonnaise
¾ pounds Monterey Jack Cheese, Grated

Directions:
Roughly chop both black olives and pimiento-stuffed green olives. Slice green onions into thin pieces.

Combine butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined. Spread mixture onto French bread that has been sliced lengthwise. Bake at 325ºF for 25 to 30 minutes or until cheese is melted and browning.

Mixture can also be refrigerated (up to two days) and used as a dip. Great with crackers.

Pecan Caramelized Brie - Easy & Incredible!

***WOW...I just made this a few minutes ago, and I couldn't wait to share this recipe with you. This appetizer is the perfect fusion of French and Southern cuisine...In fact, it makes me want to say "Bonjour, Ya'll!" Haha.

This time of year, I also like experimenting with new recipes that I might incorporate into our Thanksgiving dinner. Without a doubt, this will be the star appetizer on our table this year! It is incredibly easy...It only took me 10 minutes to throw together...and it makes a gorgeous presentation!

We recently visited a fabulous, family-owned restaurant named The Char in Beckley, West Virginia. That night when we were trying to figure out where to eat dinner, I came across their website and took a look at their menu. I immediately knew that I wanted to eat there when I saw "Pecan Caramelized Brie" on the appetizer menu. I was intrigued! Such a quick decision is rare, folks. Now, let me just explain something....As a libra, I am SUCH an in-decisive person...just ask Brad...LOL. I have trouble deciding everything...where to eat lunch each day, what to wear, what to make for dinner, I could go on and on.

The appetizer menu wasn't the only part that looked good...it ALL looked good! If you're ever in the area, I highly recommend making time to have a meal there.

Just like the Pasta Rosa that I had in New Orleans, I knew that I wanted to try and re-create the Brie once I got home. I found THIS recipe, which sounded really close to what we had. I did make a few changes...I left out both the cranberries and the hot sauce. The hot sauce just sounded too odd...I wasn't sure about that flavor combo. I also didn't have any cranberries on-hand, but there wasn't any in the version at The Char anyway.

This Brie was seriously like a Pecan Pie on top of a delectable round of cheese...YUM! The savory-ness of the cheese balances perfectly with the sweetness of the topping. I served it with crackers...it doesn't get much better than that!

Ingredients:
1/2 cup lightly packed brown sugar
1/4 cup corn syrup
1/4 cup unsalted butter
1/4 teaspoon baking soda
1/4 teaspoon salt
1-1/2 Cup pecan halves, roughly chopped
One 3-inch round, Brie cheese

Preparation:
Combine brown sugar, corn syrup and butter in a small, heavy-bottomed saucepan set over medium heat. Stir mixture until it comes to a boil. Boil gently, without stirring, for 1 minute.

Remove from heat and, shielding hands with oven mitts, quickly whisk in baking soda. Stir in salt and pecans until mixture begins to set, about 30 seconds.
Working quickly, mound warm nut mixture on top of Brie and let caramel cascade down sides of cheese.

Swiss & Prosciutto Tartine

***What in the world is a tartine, you say? Well, a tartine is traditionally an open-faced, French sandwich. They can be topped with countless combinations of meats, cheeses, fruits, vegetables and herbs. I've wanted to make a tartine ever since we traveled to Paris back in February of this year. This particular meal reminded me of a wonderful lunch we had in Paris at a sandwich shop. I had a delicious sandwich served on a fresh baguette....Mmm....I can taste it now!

Yesterday, Brad and I were getting hungry and I was already busy working on the Daring Baker Challenge for this month (And no, I can't tell you what that challenge is until the 27th!) I didn't particularly want fast food...we were craving something scrumptious. Even more important, I wanted to make something easy! So, I peered into my fridge and pantry and realized that I could make a yummy tartine. I made THIS French Bread very recently, and I just so happened to have an extra baguette in the freezer. I popped the baguette into a 350 degree oven for a few minutes, and it was as good as new! As it turns out, French Baguettes can be frozed very successfully! I topped the baguette slices with some wonderful Swiss cheese that was waiting for its 15 minutes of fame in the fridge. A few slices of fresh Prosciutto turned out to be the perfect addition, and chopped parsley finished it off flawlessly.

This dish was beautiful and could easily be served as an hor d'oeuvre at a party, after cutting it into bite-sized pieces. The combination of flavors is so satisfying and delicious, that you'll want a second helping! This is definitely one of my new favorites!!!***

Ingredients:
1 French Baguette
4-5 slices Prosciutto di Parma, torn into pieces
A block of Swiss Cheese
2 Tbsp. fresh Parsley, chopped
Salt & Pepper, to taste
Extra Virgin Olive Oil
Directions:
Preheat oven to 350 degrees.

Slice baguette in half, lengthwise. Place slices on a baking sheet and lightly drizzle with olive oil.

Next, cut Swiss cheese into slices that are about 1/8 inch thick. Cover the baguette slices with the cheese. Top with Prosciutto di Parma. Drizzle lightly with the olive oil. Season with salt and pepper and then sprinkle with the parsley.

Place baking sheet on the middle rack and bake until the cheese is melted and the bread is lightly toasted.

Cut into 2 inch pieces and serve immediately.

Lavash Crackers w/Sun-Dried Tomato Spread


***This month's Daring Bakers Challenge was a great one. I was happy to see that we had a savory dish for a change...you won't find any buttercream, ganache, or cake in this post! This month's hosts were Natalie from Gluten a Go Go and Shelly from Musings From the Fishbowl. Thanks ladies for a wonderful challenge!

This month, we had to come up with a vegetarian spread/dip to go along with the lavash crackers. We were given complete creative liberty when it came to the spread, as long as it was vegan.

When given the option, there are 3 ingredients that I love incorporating into recipes: Chocolate, Coffee, and Sun-Dried Tomatoes! So naturally, I thought fresh basil and sun-dried tomatoes would make an awesome combination here.

I added chopped fresh basil to the cracker dough after the 90 minute rise...I simply kneaded it into the dough. Once I had the crackers ready to go into the oven, I brushed the tops with sun-dried tomato infused olive oil from the jar, and topped them off with a little coarse sea salt. Yum!

The recipe for the spread is at the bottom of this post, along with a link to a helpful video. It was delicious! The fresh garlic really added a nice flavor, and I always love sun-dried tomatoes. Enjoy!***


Lavash Crackers
Makes 1 sheet pan of crackers
* 1 1/2 cups (6.75 oz) unbleached bread flour or gluten free flour blend (If you use a blend without xanthan gum, add 1 tsp xanthan or guar gum to the recipe)
* 1/2 tsp (.13 oz) salt* 1/2 tsp (.055 oz) instant yeast
* 1 Tb (.75 oz) agave syrup or sugar
* 1 Tb (.5 oz) vegetable oil
* 1/3 to 1/2 cup + 2 Tb (3 to 4 oz) water, at room temperature
* Poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, or kosher salt for toppings

1. In a mixing bowl, stir together the flour, salt yeast, agave, oil, and just enough water to bring everything together into a ball. You may not need the full 1/2 cup + 2 Tb of water, but be prepared to use it all if needed.

2. For Non Gluten Free Cracker Dough: Sprinkle some flour on the counter and transfer the dough to the counter. Knead for about 10 minutes, or until the ingredients are evenly distributed. The dough should pass the windowpane test (see http://www.wikihow.com/Determine-if-Bread-Dough-Has-Been-Mixed-Long-Enough for a discription of this) and register 77 degrees to 81 degrees Fahrenheit. The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), satiny to the touch, not tacky, and supple enough to stretch when pulled. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.

2. For Gluten Free Cracker Dough: The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), and slightly tacky. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.

3. Ferment at room temperature for 90 minutes, or until the dough doubles in size. (You can also retard the dough overnight in the refrigerator immediately after kneading or mixing).

4. For Non Gluten Free Cracker Dough: Mist the counter lightly with spray oil and transfer the dough to the counter. Press the dough into a square with your hand and dust the top of the dough lightly with flour. Roll it out with a rolling pin into a paper thin sheet about 15 inches by 12 inches. You may have to stop from time to time so that the gluten can relax. At these times, lift the dough from the counter and wave it a little, and then lay it back down. Cover it with a towel or plastic wrap while it relaxes. When it is the desired thinness, let the dough relax for 5 minutes. Line a sheet pan with baking parchment. Carefully lift the sheet of dough and lay it on the parchment. If it overlaps the edge of the pan, snip off the excess with scissors.

4. For Gluten Free Cracker Dough: Lay out two sheets of parchment paper. Divide the cracker dough in half and then sandwich the dough between the two sheets of parchment. Roll out the dough until it is a paper thin sheet about 15 inches by 12 inches. Slowly peel away the top layer of parchment paper. Then set the bottom layer of parchment paper with the cracker dough on it onto a baking sheet.

5. Preheat the oven to 350 degrees Fahrenheit with the oven rack on the middle shelf. Mist the top of the dough with water and sprinkle a covering of seeds or spices on the dough (such as alternating rows of poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, kosher or pretzel salt, etc.) Be careful with spices and salt - a little goes a long way. If you want to precut the cracker, use a pizza cutter (rolling blade) and cut diamonds or rectangles in the dough. You do not need to separate the pieces, as they will snap apart after baking. If you want to make shards, bake the sheet of dough without cutting it first.

6. Bake for 15 to 20 minutes, or until the crackers begin to brown evenly across the top (the time will depend on how thinly and evenly you rolled the dough).

7. When the crackers are baked, remove the pan from the oven and let them cool in the pan for about 10 minutes. You can then snap them apart or snap off shards and serve.


Sun-dried Tomato Spread
Ingredients:
2 cans tomato paste
2 tablespoons fresh basil
1 clove crushed garlic
3/4 cup sun-dried tomatoes
1 teaspoon sugar
pinch of salt
1/2 teaspoon of garlic salt

Directions:
Wash and dry some basil. Use about 4 to 6 leaves to make two tablespoons. Put the basil in the mixer. Next add 1 clove of crushed garlic.

Take your sun dried tomatoes of their container and drain out some of the oil. Measure 3/4 of a cup of tomatoes and add them into the mixer. Add a pinch of salt, a teaspoon of sugar and 1/2 teaspoon of garlic salt.

Put on your lid and turn on the mixer. You want to aim for a medium consistency that looks like it will be easy to spread with a knife. You may need to stop mixing and use your scraper to take food off of the sides. If the spread seems thick, slowly add 1/2 a cup of olive oil.

Scoop your spread out of the mixer and place into a service dish or storage container. Be sure to refrigerate it if you are not serving it right away. This is a lovely spread to bring to a party or to have at a picnic.

Crash Hot Potatoes


***Here's another great recipe from Pioneer Woman. You just have to check out her post about this recipe HERE. She's got some fabulously detailed photos. Next time I make this, I'm definitely going to use smaller potatoes. When I went grocery shopping, the only red potatoes available were really large. So, I had trouble mashing these down all the way. They still tasted great...just not quite as flat as they should be.***

Ingredients:
New Potatoes (or other small, round potatoes)
Olive Oil
Kosher Salt
Black Pepper
Rosemary (or desired herbs)...I used freshly chopped parsley

Directions:
Bring a pot of salted water to a boil. Add in as many potatoes as you would like to make and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet, leaving plenty of room between each one.

With a potato masher, gently press down on each potato until it slightly mashes. Rotate the potato masher 90 degrees and mash again. Brush the tops of each potato generously with more olive oil.

Sprinkle each potato with kosher salt, freshly ground black pepper, and fresh chopped rosemary (or chives or thyme or whatever herb you have available).

Bake in a 450 degree oven for 20-25 minutes until golden brown.

Emeril's Shredded Chicken Nachos

***Wow...these nachos were awesome! I don't watch Emeril on a regular basis, but I caught this as he was making it. I had to change the recipe a good bit, because I didn't have all the needed ingredients on-hand (and I didn't want to wait until I did...hah!). However, you can find the original recipe HERE. I also had no idea that tortilla chips were so easy to make at home. They were delicious.***

With cheese sauce added:

For the Chicken Mixture:
3 tablespoons olive oil
2 pounds boneless, skinless chicken breast diced into 3-inch strips
1 teaspoon salt
2 cups thinly sliced onions
1 tablespoon minced garlic
2 cups chicken stock
1 can diced tomatoes
1 pkg taco seasoning

Directions:
Set a wide-mouthed 3-quart saucepan with lid over medium-high heat and add the oil to the pan. Season the chicken pieces with salt & pepper. Add the chicken to the pan and sear for 3 minutes per side. Add the onions to the pan and saute for another 3 minutes. Add the garlic to the pan and saute for 1 minute. Add diced tomatoes (with juices) and taco seasoning, stir well.

Pour the chicken stock over the chicken and bring to a boil. Reduce to a low heat and cover. Continue to cook the chicken until very tender (30 min. - 1 hour), stir the chicken to shred it and continue to cook, covered, for another 30 minutes. Set aside as you prepare the nachos.

For the Nachos:
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups milk
2 cups grated sharp yellow Cheddar cheese
1/2 teaspoon salt
1 pkg corn tortillas
2 cups shredded Monterey Jack cheese
Dried parsley, to taste
3/4 cup sour cream, for garnishing (I left this off)
1/2 cup sliced pickled jalapenos, for garnishing (I left these off also)
2 tablespoons chopped fresh cilantro leaves, for garnishing

Tortilla Chips:
To make the tortilla chips, heat a saucepan of vegetable oil over medium-high heat. Cut each corn tortilla into 4 wedges. Place wedges in hot oil and cook until desired crispness. Remove chips from oil and place on a paper towel to drain. Season with salt.


Homemade tortilla chips....YUM!

Cheese Sauce:
In a medium saucepan, melt the butter over medium-high heat and whisk in the flour. Cook, stirring constantly, for 2 to 3 minutes. Do not allow the flour to color. While whisking constantly, add the milk in a steady stream.

Cook, stirring frequently, for about 5 minutes, or until the sauce is thickened and bubbly. Add the cheddar and monterey cheeses, salt, parsley and stir until the cheese is melted and the sauce is smooth. Cover and remove from the heat.

To Finish:
Place tortilla chips on a large platter. Cover chips with chicken mixture, and top the chicken with the cheesy sauce. Garnish with the sour cream, pickled jalapenos and cilantro.

Baked Pita Chips

*** These are SO incredibly simple to make, and they're very good....almost like mini pizzas, hah. You can alter this recipe to make as many servings as you need! I served them as a side to the Angel Hair Pasta with Chicken & Herbs posted below, so we only ate 3 pita chips each.***

Ingredients:
1 large piece of pita bread
1 - 2 cups mozzarella or cheddar cheese, shredded
Dried oregano

Directions:
Preheat oven to 375 degrees.

Cut pita bread into 6 triangular-shaped pieces. Place pieces on an ungreased baking sheet. Sprinkle with shredded cheese and oregano.

Bake for approximately 15 minutes, or until pita chips are crispy and cheese is melted.

Voila!

Mozzarella and Sun-Dried Tomato Cigars

***Here's yet another yummy recipe from Giada. Her recipes never let me down! For this one, I only made the cigars....not the salad dressing. I used a pre-made, bottled Italian Vinaigrette to save time. However, I did want to include the ingredients and directions for Giada's homemade dressing because it looked so good.***


Cigars:
6 sheets phyllo dough
4 tablespoon butter, melted
8 ounces smoked mozzarella, sliced 1/4-inch thick
8 ounces sun-dried tomatoes, drained

Dressing:
1/2 cup extra-virgin olive oil
1/4 cup Prosecco
2 tablespoons cider vinegar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 cups field greens

Directions:
Preheat the oven to 325 degrees F.

Lay a sheet of phyllo dough on a clean dry work surface. Use a pastry brush to brush the phyllo sheet with melted butter. Fold the phyllo sheet in half lengthwise, resulting in a 12 by 8-inch rectangle. Brush the top of the phyllo with melted butter. Place a few slices of smoked mozzarella at a narrow end of the phyllo rectangle, leaving 1-inch on each side. Top the cheese with a few pieces of sun-dried tomatoes. Carefully roll up the phyllo dough into a cigar shape starting with the cheese and tomato end. About half way through the rolling, tuck in the 1-inch ends of the phyllo dough, and continue rolling. Place on a foil-lined baking sheet, seam side down, and brush the top with butter. Continue rolling the 5 remaining cigars. Bake until golden, about 25 to 30 minutes.

Meanwhile, in a small ball jar or in a plastic container with a tight-fitting lid combine the extra-virgin olive oil, Proseco, cider vinegar, salt, and pepper. Shake well. Toss the Proseco vinaigrette with the field greens. Place the dressed greens on a serving platter or on individual serving plates.

Slice the cigars into 2-inch pieces. Place atop the dressed field greens. Serve immediately.

Fried Green Tomatoes!


Here's another classic Southern dish. Fried green tomatoes have always been a favorite of mine. I like them best when they're nice and crispy. The Creole seasoning in this recipe adds a nice little "kick" also. I served these with the Shrimp in Lemon Butter posted below. Yum-O!

Ingredients:
3 large green tomatoes, cut into 1/8-inch-thick slices
1 tbsp. salt
Hot tap water
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
2 tsp. Creole seasoning
Canola Oil


Directions:
Combine tomato slices, salt, and hot water in a baking dish; let stand 30 minutes. Drain.


Combine flour, cornmeal, and Creole seasoning in a shallow dish. Dredge tomato slices in cornmeal mixture, shaking off excess.


Fry tomato slices in a large skillet of canola oil on medium-high heat until golden brown. Remove tomatoe slices from skillet and let drain on a paper towel. Season with salt.

***I keep any left-over cornmeal mixture in a ziplock bag and re-use it. It can also be used to make fried okra and fried pickles!***

Chicken, Spinach and Feta Quesadillas



If you like to eat at Zoe's Kitchen, you'll like these! Zoe's Kitchen has a spinach & feta quesadilla...Brad has gotten them the last few times we've been, and he LOVES them. This recipe is very similar...I just added chicken and sun-dried tomatoes. If you haven't noticed, I've been on somewhat of a sun-dried tomato kick lately...I love them! They added the perfect amount of sweetness to this recipe.


Ingredients:
8" Flour Tortillas
1 Box Frozen Spinach
Feta Cheese, crumbled
Sun-Dried Tomatoes, chopped
Baked Chicken Tenders, fully cooked and chopped
1 - 2 tbsp. Extra Virgin Olive Oil (E.V.O.O.)
Salsa, for dipping
Salt & Pepper for seasoning


Directions:
Bake chicken according to package directions. When chicken is fully cooked, chop into small pieces. Season with salt & pepper.

Next, put frozen spinach in a medium saucepan of water and bring to a boil. Cook for 8 - 10 minutes. Drain and squeeze excess water out of the spinach.

Place a tortilla on a plate and add a layer of spinach on top. Follow with a layer of chicken, then feta cheese, then finally a layer of sun-dried tomatoes. Heat a large skillet over medium heat on the stovetop. Coat bottom of saucepan with E.V.O.O. Very carefully, place the loaded tortilla into the skillet, covering with a second tortilla. Let the quesadilla cook for a few minutes, and then very slowly & carefully flip the quesadilla, using the largest spatula you have (this will make it easier). Once the quesadilla is golden brown on both sides, place on a plate and cut into quarters using a pizza cutter.

Serve with salsa for dipping.

Dad's Spectacular Spinach Dip



This is easily the best spinach dip I've ever had. You will love it!

1 can artichoke hearts
1 can rotel (Italian)
1 package frozen chopped spinach, thawed
16 oz. bag shredded mozarella cheese
5 oz. bag shredded parmesan cheese
8 oz. sour cream
8 oz. cream cheese
1 bag bacon pieces
garlic powder, to taste


Mix together artichoke hearts, rotel, spinach, mozarella cheese, sour cream, and cream cheese. Place mixture in a baking dish, and sprinkle garlic powder on top. Next, sprinkle a layer of parmesan cheese, followed by a layer of bacon pieces. Bake at 350 degrees for 30 - 35 minutes. Serve with your favorite chip or cracker.

Chicken Ball

***This makes a great addition to any party!***

1 can chicken
1 (8 oz.) cream cheese
garlic salt, to taste
1 tsp. liquid smoke

Mix all listed ingredients and shape into a ball. Top with parsley and serve with your favorite crackers.
