Mini Pumpkin Whoopie Pie's

In addition to my mini pumpkin cheesecakes that I made for our office Chili cook-off I also made some mini pumpkin whoopie pies. If you read my blog often you will find I love to make whoopie pies. I just think they are fun, super easy, and taste great. Since it is the season of pumpkin and I had already made pumpkin cheesecakes I thought I would stick with the theme and go with pumpkin whoopies, I mean what isn't to like? Pumpkin as an ingredient makes for some really moist and flavorful desserts - everyone loved them and they were the perfect size to just pop in our mouth. These would be awesome for kids on Thanksgiving, they are so good they might even want to help you make them.

Pumpkin Whoopies:
  • 2 1/4 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tblsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1 tsp ground allspice
  • 1 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 1/2 cups solid pack pumpkin
  • 1 egg
  • 1 tsp vanilla extract
  1. Preheat oven to 350, line two making sheets with parchment paper and set aside.
  2. Sift together the flour, baking powder, baking soda, cinnamon, ginger, allspice, nutmeg, and salt into a bowl or piece of waxed paper.
  3. In the work bowl of a stand mixer fitted with the paddle attachment, beat together the brown sugar and butter on low speed until just combined. Add in the pumkin, then the egg, beating well. Add the vanilla and beat until combined.
  4. Slowly add the flour mixture and beat on low until incorporated, scraping down the sides of the bowl as you go.
  5. Using a small ice-cream scoop or a pastry bag or really anything you choose... make small rounds of the batter as small or large as you like. I made mini ones so I used my eye to make them all roughly the same size and by using a large round tip on the end of my pastry bag. Make sure to space them at least two inches apart from each other.
  6. Bake one sheet at a time for about 12-15 minutes each, or until the cakes begin to crack and are firm to the touch (this will also change depending on how small are large you make them). Let the cakes cool completely before icing them.
Maple Cream Cheese Frosting:
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, at room temperature
  • 8 ounces cream cheese at room temperature
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  1. In the bowl of a stand mixer fitted with a paddle attachment, beat the butter until smooth,
  2. Add the cream cheese and beat until combined.
  3. Slowly add the powdered sugar, maples syrup and vanilla until smooth.

To assemble:
  1. Flip over half of the completely cooled whoopies so the flat side is facing up.
  2. Pipe enough to cover the whoopie 1 1/2 tsp - 1 tblsp of icing depending on how large the whoopies are.
  3. Place another whoopie flat side down on top and press down lightly. If your icing gets too soft you can always put it in the fridge before hand to firm it up a bit. These are best served at room temperature. Store left overs in an airtight container. Enjoy!

4th Flag Cupcakes



4th of July is upon us and I thought we should celebrate with cupcakes! My original plan was to make a "flag cake" which in case you have never seen one it is two sheet cakes layered on top of each other usually with a whipped cream frosting and then you use either raspberries or strawberries to create the red stripes of the american flag and blueberries to make the stars. It is an adorable festive cake that I recommend you try one day if you haven't already. However, this year I wanted to make something a little more unique and I was in the mood to experiment so I drew out a cupcake that had all the colors of the American flag only in a deconstructed way so it wasn't as literal. These are easy but still special and look like a professional cupcake. If you want you can always make the cupcake part in advance along with the raspberry drizzle and assemble when you have a little time to spend doing them carefully. Happy 4th, enjoy!

Makes about 17 cupcakes

For the cupcakes:
  • 1 package of yellow cake mix
  • 3 eggs
  • 1/3 cup of oil
  • 1 1/3 cup of water
  • 1 package of fresh blueberries
  • 1 package of fresh raspberries
Whipped cream frosting and filling:
  • 4 cups of heavy whipping cream (might need to make this in two batches, it makes a lot)
  • 1/3 cup of sugar
  • 3 tsp of almond extract
Raspberry Drizzle:
  • 1 (12 oz) package of frozen raspberries thawed and drained, juice reserved
  • 1/4 cup of sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons of raspberry liqueur (if you have it, don't worry if you don't)

Directions:
  1. Preheat you oven to 350 and center your rack.
  2. Mix the cake mix with eggs, water, and oil according to the back of the cake mix package.
  3. Line your cupcake tray with which ever color liners you like and fill 3/4 of the way to the top so that you get a little overlap once they bake making sure you have enough to cut off and use later for tops.
  4. Bake for about 15-18 min. Cool completely on a rack, once cooled carefully cut the top of each cupcake off using a serrated knife.
  5. While the cupcakes are cooling make your raspberry sauce. Add enough water to reserved raspberry juice to measure 1 cup (make sure you do this otherwise it will be way to thick in the end) Stir together sugar and cornstarch in a 1-quart saucepan. Stir in juice and raspberries.
  6. Heat to boiling over medium heat. Boil and stir 1 min; strain out the seeds and let cool completely, your done. If you want you can add the liqueur after you strain it.
  7. In a stand mixer fixed with the whisk attachment, whisk together your whipped cream ingredients - cream, sugar, and almond extract until stiff peaks form. About 2-3 min.
  8. In a pastry bag fitted with a small round tip fill with about a quarter of the whipped cream mixture and insert into the center of the cupcake bottoms to fill the centers with cream.
  9. In a larger pastry bag fitted with a large round tip put a layer of frosting on the top of the cut cupcakes. Place a small handful of blueberries on top of the cream layer on each cupcake.
  10. Put your cupcake tops back on top of the blueberry cream layer. Using the rest of the whipped cream frosting pipe a mound of whipped cream on top of it as high as you want, I feel for these they look best when there is a good amount of height to them, go all out :-)
  11. Drizzle with the raspberry sauce using just a spoon or you can put it in a ziplock bag and cut a tiny tip off and drizzle that way. Top each one off with a fresh raspberry and your done! Happy 4th Flag Cupcakes!

Oatmeal Whoopie Pie with a twist of lemon please?



According to food historians, the term "Whoopie Pie" came from back in the day when Amish woman would make these little cookie concoctions for their husbands lunchboxes before they went out into the fields. When the farmers would find these treats in their lunch, they would shout "Whoopie!" - I'm not so sure about that story but I can say that these little bad boys are enough to make anyone yell out for sugary joy.
This recipe was originally my amazing Auntie Barbara's :-) she was kind enough to share with me many of her amazing recipes and now I am sharing it with you only I have made a few changes to put my own twist on things and not completely rip of my sweet aunt. These aren't your traditional whoopie pies as you might expect them to be soft like the kind you buy in the grocery store. I used to love the Little Debbie version that come in a box when I was little. The have more of a cookie texture with a hit of lemon in the cream filling to help cut the sweetness of the cookie and cream. Since these are oatmeal they are great in the fall or in the summer since they have that summery lemon tang.

Here's the recipe:

COOKIES:
  • 1 C. Butter, softened
  • 1 C. Packed brown sugar
  • 1/2 C. Sugar
  • 1 Large egg
  • 2 Tsp. Vanilla
  • 1 1/2 C Flour
  • 1 Tsp. Baking soda
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Cinnamon
  • 3 C. Uncooked oatmeal oats. (You can use a little more depending on how stiff you want your cookies)

Beat butter and sugars together... add egg and vanilla. mix in flour, salt, cinnamon, and soda. Stir in oats. Bake at 375 8-10 min (watch them depending on your oven). COOL COMPLETELY before applying your cream filling. You will have a mess on your hands if you rush the cooling process. What is nice about this recipe is you can make the cookies in advance and wait to make the cream filling when you are ready to serve.

Cream Filling:

  • 1/2 C. Butter softened
  • 2 C. Powdered sugar
  • 2 Tbl Whipping Cream
  • 1 Tsp. Vanilla
  • Zest of 1 lemon
  • Juice of half of a lemon (you can add more or less depending on how lemony you want the filling)

Combine butter, sugar, whipping cream, vanilla, and fresh lemon juice in a bowl. Beat on high until light and fluffy. Add your lemon zest last and mix in lightly. Make a sandwich with the cookies. Use a pastry bag with a round tip if you want to make them neater and in my opinion your life easier.

Whoopie!

NOTE: I just made this recipe in a friends oven which is much nicer then mine and I noticed that since her oven was on confection it made the cookies much fluffier which made them harder. If using a confection oven I would use another 1/4 cup of butter and make the dough flatter rather then balls on the pan, this way they will spread thinner when you bake them. Hope this helps!

Raspberry Cream Cupcakes




I was inspired to create these cupcakes after seeing a similar design on Susannah Blakes "Cupcake Heaven" cookbook cover. She calls her version Victoria Cupcakes and I am sure the are as delicious as they are beautiful.

My friend Jill had an amazing idea to throw a Valentines Dessert Party, which gave me the perfect opportunity to try my spin on these amazing cupcakes!

To begin let me just say I am a strong believer in Duncan Hines Classic Yellow cake mix. I have tried the other mixes by the various competitors, I still find Duncan Hines to be the most moist and flavorful. By using their classic yellow cake mix for the base of these cupcakes you save time giving your more time to decorate them in a way that will stand out from any other cupcake in the room...and they will taste amazing!

INGREDIENTS:

Cake:
  • 1 pkg Yellow Cake Mix
  • 1 1/3 cups of water
  • 1/3 cup of Vegetable Oil
  • 3 Large Eggs
To Decorate:
  • 1 Cup of Port (Tawny brand works well)
  • 1 Cup of Heavy Cream
  • 1 Tablespoon of Sugar
  • 1/2 Teaspoon Almond Extract
  • 1 Jar of Raspberry Jam
  • 1 1/2 Packs of Raspberries
  • Confectioners' sugar, for dusting

INSTRUCTIONS:
  • Preheat the oven according to your cake package.
  • Mix and bake the classic yellow cake cupcakes as directed on the back of the box. Make sure you fill the cupcake liners up high so you have enough of a top to cut off later.
  • Transfer cupcakes to a wire rack to cool completely.
  • Using a serrated knife, carefully slice the top off each cupcake, down to the level of the paper liner.
  • Sprinkle 1/4-1/2 tsp of port (depending on how much port flavor you like) into the center of each cut cupcake.
  • Spread each cupcake with about 1 teaspoon of Jam, enough to have a nice layer of jam.
  • Whip the cream, sugar, and almond extract until stiff peaks form. Put your beaters in the freezer earlier in the day for best results.
  • Spoon the whip cream mixture on top of the jelly-covered cupcakes.
  • Top each cupcake with two fresh raspberries.
  • Replace the top of each cupcake and dust with confectioners' sugar.

Makes 18 cupcakes. Use whatever fun cupcake liners you like. I made mine fore a Valentines day party so I used Hearts but you can use any color depending on your mood.

If you aren't into Raspberries these could be done with really any other fruit. Blueberries or Peaches sound great also.

Recipe of the Week - Strawberry & Cream Shortcakes

These were supposed to be sponge cupcakes. But somehow.. they turned into some sort of shortcake. I'm not sure what I did wrong.. but they weren't what I thought they would be. I think I overbeated the mixture when I was beating the eggs. Overbeating is a big NO NO when making sponge cakes. I'll keep practicing!!

Strawberry & Cream Shortcakes[Makes 10] Printable Recipe

You will need...
Plus cream & strawberries for the filling.

Pre-heat your oven to 180 degrees celsius, and line 10 holes of a 12 hole muffin tray with cupcake wrappers.
Beat the 3 eggs for approximately 5 minutes or until they are light and fluffy. (Try not to overbeat them..)
Add about 1 tablespoon of sugar at a time, making sure it is mixed in after each one.Sift the plain flour, corn flour and self raising flour into a bowl, and then sift again.
Sift the flours once more, this time into the egg mixture.

Gently fold in the flour. Again, try not to overmix!
Pour approximately 1/4 cup of mixture into the prepared tray, and place in the over for 20-25 minutes.
Once they are cooked, place them immediately on a wire rack to cool.
Once cooled, whip up some cream (I used about 1/2 cup) and cut up some strawberries (probably about half a strawberry per cake) you could also put jam, but I didn't have any!
Take the wrapper off the cupcake, and cut the cupcake in half. Place a heaped teaspoon of cream on the bottom of the cupcake, and then some cut up strawberry ontop of that.
Replace 'lid' of cake.
