Brides (past, present and future) from the Bliss! wedding forum and wedding cake creators from the Wilton forum gave me their thoughts on wedding cake trends. The overall response was that less is more as wedding cakes take on a more streamlined appearance. Vibrant colors are IN and there's a growing trend toward chocolate wedding cakes. Fresh flowers are still IN but are favoring the exotic to the traditional rose. Pillared cakes are OUT. Stacked are IN. Fountains are being replaced by bowls of beta fish or vases filled with flowers/fruit. The traditional bride and groom topper is also falling out of favor. Monograms, bows, flowers now top the trendiest of wedding cakes. Bridges, stairs and other plastic embellishments are OUT. Pearls are being replaced by Swarovski crystals and cake gems. Puff bases and tulle are OUT. Today's wedding cakes are more likely to be resting on a plateau or a pedestal. One of the more surprising trends is to not have a wedding cake at all. Some brides are opting to forgo the wedding cake in favor of cupcakes, pies or other desserts. The rule seems to be that there are no rules as brides favor creative expression over tradition.
