When she got married in 1955, Donna Knez had no intention of saving the top layer of her angelfood wedding cake. Now it will top the cake as she and her husband, Fred, celebrate their 50th wedding anniversary.
Donna credits her mother with saving the wedding cake.
"She said that I should freeze it, and my husband and I could eat it on our first wedding anniversary," Mrs. Knez said.
There was one small problem - the size of the newlyweds' refrigerator.
"My husband was attending college, I was working, and our freezer was just about big enough to hold a few ice cubes and a pound of ground beef," Mrs. Knez said. "I just sat and looked at that cake for a few weeks, and by that time, I didn't have the heart to throw it out."
The angelfood cake dried out, and Mrs. Knez re-frosted it for her 10th and 25th anniversaries.
"Romy Wilson of West Mineral is making a rectangular anniversary cake for us, and she'll re-frost the angelfood layer for me," Mrs. Knez said. "It will be placed on a pedestal to top the anniversary cake. We had a three-tiered wedding cake, with a couple of white swans between the tiers, and we'll be using them, too."
After the celebration, she will let the cake dry for a few weeks, peel off the frosting and put it away again. However, she said that she doesn't plan on using it for any more anniversary celebrations.
"I'm going to save it for my grandson," Mrs. Knez said. "But he's only 9, so it will be a while before he can use it for his wedding."
