

These are the cupcakes that my classmates and I have created while attending a class to learn how to make vanilla cupcakes with buttercream. I hope to put into practice soon before it goes down 'memory loss' lane. Below is the recipe.
Vanilla Cupcakes
Ingredients
1 1/2 cup self raising flour (sieved)
125 g unsalted butter
1 tsp vanilla extract
3/4 cup castor sugar
2 eggs
1/2 cup fresh milk
Method
- Preheat oven 180 degrees Celsius
- Beat butter, sugar & vanilla till pale & creamy
- Add eggs 1 at a time
- Fold in the flour, then add the milk till well combined
- Spoon into muffin pan
- Bake for 15-18 mins
- Set aside for 5 mins before turning out onto wire rack to cool.
Meringue Buttercream
Ingredients
1/2 cup egg white (3-4 eggs)
1 cup castor sugar
300 g unsalted butter
1 tsp vanilla extract
Method
- Put egg whites & sugar onto double boiler with simmering water. Heat gently, stirring occasionally till sugar dissolves.
- Transfer to a very clean mixing bowl and whisk at highest speed 1 -2 mins till stiff peaks form.
- Beat on medium speed until mixture cools down to room temperature (15 mins)
- Add butter a tbsp a time until each piece is incorporated
- Then beat at high speed for 1 min. Add vanilla and/or colouring if desired.
