Gingerbread & Disney Cookies

Maybe because of my daughter's secondary school posting, this December's activities seem like never ending to me.

We reported to her new secondary school this morning. This school is her 2nd choice and she says she likes the school very much. She is thankful that she managed to get in. I must say this is a better choice because if she has gotten her 1st choice, the travelling would not be so convenient.

I've prepared my Christmas baking ingredients weeks ahead but just could not get down to baking. Today I finally finished my gingerbread cookies' baking. I've also put to use my newly bought Disney and Hello Kitty cookie cutters.

The Disney cookies taste yummy. But next time I will make the texture smoother. As for the gingerbread cookies, I'm satisfied with the final result because they are not too hard like those I have bought and tried in the past Christmas.

I especially like the gingerbread boy cutter/mould that comes with his eyes, mouth and buttons. It was so much easier to cut with it. The logcake seen here is a gift from my husband's company.

Gingerbread Recipe

Ingredients
3 cups flour
1/4 tsp salt
1 tsp baking soda
1 tbsp ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 cup molassas
1 tbsp vanilla essence/extract
200 g unsalted butter
3/4 cup brown sugar
1 egg

Method
  1. In a large bowl, sieve and mix flour, salt, baking soda, ginger, cinnamon, ground cloves and ground nutmeg together.
  2. In another bowl, mix together unsalted butter, brown sugar and egg.
  3. Stir the dry ingredients into the creamed mixture. Then add molasses and vanilla.
  4. Let dough rest for at least 2 hours. Then, roll dough until it is about 1/4 inch thick.
  5. Cut out gingerbread men with a cutter.
  6. Bake at 180 degrees C for 7 to 10 mins on a greased cookie sheet.
