Black Forest Cake


My first bake for 2008. Thanks to K, I have a chance to put into practice what I have learnt - a Black Forest cake. She has ordered this for her son's birthday.

The only thing that is missing here are the red cherries with stalks. According to the salesgirl from the bakeshop I went to, they have run out of stocks. She recommended a can of cherry apples. I was so disappointed with what I found when I opened the can. Instead of red coloured cherry apples that were pictured outside the can, all of them were yellow in colour. Thank God, I'd still managed to find a box of fresh strawberries in my fridge. So I made do with these.

This Black Forest cake consists of 2 slices of extra soft chocolate sponge. In between the 2 sponge slices is a generous spread of dark cherries jam and chocolate fresh cream. The whole cake is covered with non-dairy fresh cream, dark chocolate flakes and weighs 1.5 kg approximately. Email: playkeen@gmail.com.

Ingredients for sponge cake
  • 420 g sifted cake flour
  • 420 g unsweetened cocoa powder
  • 2 tsp. cornstarch
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 4 large eggs separated
  • 600g fine sugar
  • 1 tsp. vanilla extract

Method
  1. Preheat oven to 180 degrees C. Grease and line a 9 inch round cake tin.
  2. Mix together flour, cocoa, baking powder, baking soda, and salt. Beat together egg yolks, 150 g sugar, and vanilla at medium speed until thick and pale. Sift flour mixture over yolk mixture. Fold in flour mixture.
  3. Beat egg whites at high speed until soft peaks form. Slowly beat in remaining sugar until stiff peaks form. Gently fold in yolk mixture. Scrape batter into prepared baking tin.
  4. Bake cake for 20 mins until a toothpick inserted in center comes out clean. Transfer baking tin to a wire rack to cool for 10 mins. Turn cake out onto rack to cool completely.
  5. Slice cake into 2 layers and spread cherries jam filling in between the slices.
  6. Whip fresh cream until fluffy. Cover the top and sides of the cake with the whipped cream and decorate according to your liking (grated chocolate and fresh strawberries).
