Durian Cream Puffs




For the puffs:
Ingredients
140 g butter
350 ml water
175 g plain flour
4 eggs, lightly beaten

Method

  1. Preheat oven to 200 degree C
  2. Boil water and butter. Remove from fire.
  3. Add flour and stir vigorously with wooden spoon to form a smooth dough.
  4. While dough is still warm, add in eggs slowly and mix until batter is smooth and shiny.
  5. Scoop the mixture into a piping bag and pipe onto greased trays, giving about 1 -2 inch gaps between each piped batter.
  6. Bake for 20 - 25 mins until golden brown.

For the filling:
Ingredients
500 g durian (de-seed)
100 ml fresh milk
4 tbsp water
1 tbsp gelatin

Method
  1. Dissolve gelatin in water over low fire.
  2. Stir durian and milk until a smooth paste is formed. Milk may be omitted if preferred.
  3. Pour in dissolved gelatin and mix until combined.
  4. Put into piping bag and pipe desired amount into sliced puffs.
  5. Best served chilled.
