


For the puffs:
Ingredients
140 g butter
350 ml water
175 g plain flour
4 eggs, lightly beaten
Method
- Preheat oven to 200 degree C
- Boil water and butter. Remove from fire.
- Add flour and stir vigorously with wooden spoon to form a smooth dough.
- While dough is still warm, add in eggs slowly and mix until batter is smooth and shiny.
- Scoop the mixture into a piping bag and pipe onto greased trays, giving about 1 -2 inch gaps between each piped batter.
- Bake for 20 - 25 mins until golden brown.
Ingredients
500 g durian (de-seed)
100 ml fresh milk
4 tbsp water
1 tbsp gelatin
Method
- Dissolve gelatin in water over low fire.
- Stir durian and milk until a smooth paste is formed. Milk may be omitted if preferred.
- Pour in dissolved gelatin and mix until combined.
- Put into piping bag and pipe desired amount into sliced puffs.
- Best served chilled.
