Ooey-gooey and so delicious! If you love easy cakes that taste like they took hours in the kitchen, this is a recipe for you.
Hurry-Up Caramel Cake
With an electric mixer, mix the following:
1/2 cup granulated sugar
1 cup light brown sugar
2 1/4 cups all-purpose flour
1 tsp. salt
1 Tbs. baking powder
Add and mix at low speed until dry ingredients are moistened, then beat at medium speed until smooth: 8 Tbs. soft unsalted butter and 1 cup milk.
Stop to scrape bowl and beaters, then add the following and beat until smooth: 2 large eggs and 11/2 tsps. vanilla extract.
Pour batter into prepared pans and bake at 350 degrees for 30 minutes, or until the cake begins to pull away from the sides. Cool in pans eight minutes, then turn out to cool completely on racks.
Hurry-Up Caramel Frosting
8 Tbs. soft unsalted butter
1 cup light brown sugar
1/8 tsp. salt
5 ozs. evaporated milk
In a large, heavy saucepan, stir over medium heat until butter is melted, the sugar dissolved and the surface covered with bubbles. Remove from heat and stir in 1 teaspoon vanilla extract. Now beat in a 1/2 cup at a time, four cups confectioners sugar — more or less — until the frosting is spreadable. Work quickly to fill and frost the cake as this tends to harden up rather fast.
