Mother's Day and My Birthday

2nd week of May is always very special for me. Not only it is Mother's Day, my birthday also falls within this period of time. Since it's my week, I actually want to take a break from baking. I want to enjoy myself. Since it's for 2 occasions, I have chosen 2 kinds of cake (Tiramisu as well as Dark Chocolate) from The Coffee Bean and Tea Leaf to celebrate with my family. Prior to The Coffee Bean and Tea Leaf, we also had our Mother's Day celebrations in Sakae Sushi with my mum and mother-in-law.

As Sunday was almost coming to an end, I realised I have an unopened Japanese bread flour sitting in the fridge. I decided to use it to make some buns with 2 different fillings, tuna with onions, and my children's all time favourite - chicken hotdogs.


Sweet Dough Bread Recipe

Ingredients
250 g soft butter
100 g fine sugar
25 g instant yeast
1 egg
1 tsp salt
400 ml water
1 tbsp condensed milk
700 g bread flour
300 g plain flour

Egg Wash
1 whole egg + 1 tsp water.

Method
  1. Add all ingredients except flours in a mixing bowl. Mix briefly for 5 mins at slow speed.
  2. Add in bread flour and plain flour. Then beat at maximum speed for 9 mins until dough is smooth.
  3. Leave aside, cover with dry cloth, for about 30 mins or until double in size.
  4. Cut into small portions (50 to 60 g for each portion). Put in your preferred fillings and place on greased baking tray. Leave aside for about 1 hour or until double in size.
  5. Preheat oven to 200 degrees C.
  6. Brush with egg wash and bake for 9 mins or until golden brown. Makes about 36 pcs of 50g buns.
